C is C for cookie. Three Lake He Charles entrepreneurs put their own take on these popular baked goods.

Unleashing your inner Sesame Street cookie monster is getting easier and easier at Lake Charles. One “cookie” franchise will open here by the end of 2022, another will open soon, and the Cash and Carry Farmers Market recently added a cookie vendor. Lindsay LeBleu, Le Macaron. Priscilla Healy (Crumbl Cookies) and Jerica Balket (Janae’s Cookies) explain why their respective business models are far from cookie cutter.

LeMacaron’s Lindsey LeBleu didn’t blink when she was featured in the “Cookies” article.
“Americans tend to call macarons cookies,” she said. Part of my job is to teach people what a macaron is and get them used to pronouncing it. ”
Macaron is pronounced MAC-UH-ROHN. The ‘n’ is silent, like many French words such as mon chéri.
The ingredients, especially the texture, are completely different from chocolate chip or sugar cookies. A meringue-based sandwich “cookie” made with almonds, flour, egg whites, sugar, and food coloring. Common fillings include butter cream, ganache, and fruit-based jams.

Thanks to LeBleu, we’re slowly seeing French culture in Southwest Louisiana, but it didn’t happen overnight. In August 2020, LeBleu and his family went to Baton Rouge when an evacuation order was issued. Two days later she gave birth to her third child. She started small and opened a kiosk in Prien Lake Mall to introduce these light, crispy treats that are crispy on the outside and smooth and creamy in the center. Birthday cake and red velvet were top sellers. Her favorite is mango. These three flavors of hers are just the tip of egg white peak. Availability varies, but flavors include Mint White Chocolate, Strawberry Key Lime, Champagne, Lemon Cream, Sicilian Pistachio, and Colombian Coffee, just to name a few.
LeBleu celebrated the opening of LeMacaron at 2020 Country Club Road in Lake Charles in December. It’s located in the anchored Kroger shopping center across from Hocus Pocus. Selling gelato and, according to LeBleu, “the finest line of coffees.” LeMacaron is considered one of the top franchises of French pastries and macarons with 67 stores nationwide. Headquartered in Sarasota, Florida, the brand began franchising in 2012 and has since grown to more than 64 locations nationwide. Le Macarons French His pastries ranked him at Inc. 5,000 in 2016 and ranked him 17th on the 2019 Emerging Franchise list. Ranked in the top 100 food and beverage categories by Entrepreneur, he ranks ninth in the baked goods category.

Priscilla Healy said it was the Kamble Cookies mission statement that caught her attention.
“We bring friends and family together over a box of the world’s best cookies,” she said. “We plan to live up to that mission,” she added with her statement of her own vision of ‘creating meaningful moments with the people who matter most.’ ”
Her Crumbl Cookie franchise opens in March at 1704 West Prien Lake Road, a shopping center anchored to Target.
“This process started two years ago and would have gone much faster without the hurricane and COVID,” said Healy.
A teacher and coach in southeastern Texas, qualified to be a manager and looking to do just that, he decided to take a giant leap. She started with her Beaumont franchise of Crumble.
One of the features that sets this business apart from other great places to buy sweets in Southwest Louisiana is the setting and atmosphere.
“It’s like walking into an open kitchen with all the wonderful smells and sounds associated with that experience,” she said. I can see it.”
Six gourmet cookies are served each week, including two constant classics: chocolate chip and chilled sugar cookies. After trial and error, The Crumbl founder left people on a cookie quest until he created the best chocolate chip cookie. Recipe testing and customer feedback will continue to be collected from customers.
“We have over 250 cookie recipes in our recipe vault,” says Healy. She listed Lucky Charms Cookies and Birthday Cake Her Cookies as her two favorite recipes. Her website for one of Crumbl’s features cornbread, German chocolate, and carrot cake cookies.
“What brings you joy like cookies?” asked Healy. “Cookies are in many great childhood memories. You can see people stopping by to bring these cookies to someone in the hospital or someone who’s had a bad day at work. We care deeply about this community and want to bring great things to Lake Charles,” she said. “Cookies are catalysts.”
Crumbl Cookies is a new addition to this year’s Top 500 list, with sales of $200 million in 2021. This cookie franchise has taken the internet by storm and is based in Utah with 327 locations nationwide. The cookies now come in a special pink box.
Janae’s Cookie
twenty-six years old Jerika Barquette started baking bread about seven years ago. Her part-time cashier claimed her cookies were so delicious that her family decided to put her skills to the test. She should open her cookie business.
She decided they were right. Currently, she sells cookies at Lake Her Charles’ Cash and Carry Farmers Market (801 Enterprise Blvd.) on Tuesdays.
“King cake cookies are the best seller right now,” she said. “Spring is lemon blueberry cookies. We are currently developing a special Valentine’s Day flavor, a chocolate-coated strawberry girlfriend cookie.”
The familiar ‘C’ in the Cookie Monster song from Sesame Street stands for Cookie, and Balket hopes to see more ‘C’s in the future in the form of cash.
